During Bank Holiday Season we had slightly above average weather so naturally I did what everybody else did – cleaned the house, had a very average barbecue and drank booze. The extra degree or two clearly went to my head and I fancied mixing up something exotic…

I kicked off with a Piña Colada! For some reason I presumed this drink would have quite a few bizarre ingredients in, and therefore I would struggle to make it. It also feels like a bit of a novelty drink so I wasn’t in a rush to make it. Having a bottle of Bacardi in the house has really got to me as I seem to be craving all the white rum drinks! I was really pleased to discover I had all the ingredients and set about blending one up in my NutriBullet, which has seen a lot more action with cocktails than with smoothies these days.
- 2 measures Bacardi white rum
- 2 measures coconut cream (I scooped up the thick part at the top of a tin of coconut milk)
- 6 chunks pineapple
- Plenty of ice
Alas, this is where my glass collection really lets me down – it should be served in a hurricane glass (which I’ve now added to my birthday wish list) but a bowl glass had to do. This recipe came out much less sweet than I expected, so I added a little extra pineapple juice to the second one and it tasted more like you’d expect. I really enjoyed making this and love that the ingredients list is pretty accessible!

Sticking with the exotic vibes, I got out the Absolut Mango Vodka which was my last duty free purchase. I blended it with fresh mango, an orange, and lots of ice. The result? A Boozy Smoothie. A Boothie. It was delish and didn’t taste too boozy despite having two shots in each drink – I think the ice toned it down a bit.

I really enjoyed making both of these and I have to admit it was a nice break from the shaker to make both in a blender – it makes less mess! Also you can scale both of these drinks up really easily if you have a few people coming round. It’s a long old slog until the next Back Holiday but I’ll definitely be bringing the tropical vibes back
